Chinese Pork and Ham Recipes - Pork with Bean Sprouts

Ingredients
30 ml/2 tbsp groundnut
(peanut) oil
2.5 ml/1/2 tsp salt
2 cloves garlic, crushed
450 g/1lb bean sprouts
225 g/8 oz cooked pork,
cubed
120 ml/4 fl oz/1/2 cup
chicken stock
15 ml/1 tbsp soy sauce
15 ml/1 tbsp rice wine or
dry sherry
5 ml/1 tsp sugar
15 ml/1 tbsp corn-flour
(cornstarch)
2.5 ml/1/2 tsp sesame oil
3 spring onions
(scallions), chopped
Method:
Heat the oil and fry the salt and garlic until
lightly browned. Add the bean sprouts and pork and
stir-fry for 2 minutes.
Add half the stock, bring to
the boil, cover and simmer for 3 minutes.
Mix the
remaining stock with the rest of the ingredients,
stir into the pan, return to the boil and simmer for
4 minutes, stirring. Serve sprinkled with spring
onion.
