Chinese Pork and Ham Recipes - Pork with Bean Sprouts Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2 cloves garlic, crushed

  • 450 g/1lb bean sprouts

  • 225 g/8 oz cooked pork, cubed

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 2.5 ml/1/2 tsp sesame oil                    

  • 3 spring onions (scallions), chopped


Method:

  1. Heat the oil and fry the salt and garlic until lightly browned. Add the bean sprouts and pork and stir-fry for 2 minutes.

  2. Add half the stock, bring to the boil, cover and simmer for 3 minutes.

  3. Mix the remaining stock with the rest of the ingredients, stir into the pan, return to the boil and simmer for 4 minutes, stirring. Serve sprinkled with spring onion.
