Chinese Pork and Ham Recipes - Pork Chow Mien Recipe

Ingredients

  • 4 dried Chinese mushrooms

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 4 spring onions (scallions), chopped

  • 225 g/8 oz lean pork, cut into strips

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 3 stalks celery, chopped

  • 1 onion, cut into wedges

  • 100 g/4 oz mushrooms, halved

  • 120 ml/4 fl oz/ 1/2cup chicken stock

  • soft-fried noodles


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps.

  2. Heat the oil and salt and fry the spring onions until softened. Add the pork and fry until lightly browned.

  3. Mix in the soy sauce, sugar, celery, onion and both fresh and dried mushrooms and stir-fry for about 4 minutes until the ingredients are well blended.

  4. Add the stock and simmer for 3 minutes. Add  half the noodles to the pan and stir gently, then add the remaining noodles and stir until heated through.
