Chinese Pork and Ham Recipes - Pork with Noodle Pancake Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/2 tsp salt

  • 225g/8 oz lean pork, cut into strips

  • 225g/8 oz Chinese cabbage, shredded

  • 100 g/4 oz bamboo shoots, shredded

  • 100 g/4 oz mushrooms, thinly sliced

  • 150 ml/2/3 cup chicken stock

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp water

  • noodle pancake


Method:

  1. Heat the oil and fry the salt and pork until lightly colored. Add the cabbage, bamboo shoots and mushrooms and stir-fry for 1 minute.

  2. Add the stock, bring to the boil, cover and simmer for 4 minutes until the pork is cooked.

  3. Mix the corn-flour to a paste with the wine or sherry and water, stir it into the pan and simmer, stirring, until the sauce clears and thickens.

  4. Pour over the noodle pancake to serve.
