Chinese Pork and Ham Recipes - Pork with Oyster Sauce Recipe
Ingredients
450 g/1lb lean pork
15 ml/1 tbsp corn-flour
(cornstarch)
10 ml/2 tsp rice wine or dry sherry
pinch of sugar
45 ml/3 tbsp groundnut (peanut)
oil
10 ml/2 tsp water
30 ml/2 tbsp oyster sauce
freshly ground pepper
1 slice ginger root, minced
60 ml/4 tbsp chicken stock
Method:
Slice the pork thinly against the grain. Mix 5 ml/1
tsp of corn-flour with the wine or sherry, sugar and
5 ml/1 tsp of oil, add to the pork and stir well to
coat.
Blend the remaining corn-flour with the water,
oyster sauce and a pinch of pepper.
Heat the
remaining oil and fry the ginger for 1 minute. Add
the pork and stir-fry until lightly browned.
Add the
stock and the water and oyster sauce mixture, bring
to the boil, cover and simmer for 3 minutes.
