Chinese Pork and Ham Recipes - Pork with Oyster Sauce Recipe

Ingredients

  • 450 g/1lb lean pork

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 10 ml/2 tsp rice wine or dry sherry

  • pinch of sugar

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 10 ml/2 tsp water

  • 30 ml/2 tbsp oyster sauce

  • freshly ground pepper

  • 1 slice ginger root, minced

  • 60 ml/4 tbsp chicken stock


Method:

  1. Slice the pork thinly against the grain. Mix 5 ml/1 tsp of corn-flour with the wine or sherry, sugar and 5 ml/1 tsp of oil, add to the pork and stir well to coat.

  2. Blend the remaining corn-flour with the water, oyster sauce and a pinch of pepper.

  3. Heat the remaining oil and fry the ginger for 1 minute. Add the pork and stir-fry until lightly browned.

  4. Add the stock and the water and oyster sauce mixture, bring to the boil, cover and simmer for 3 minutes.
