Chinese Pork and Ham Recipes - Pork with Peanuts  Recipe

Ingredients

  • 450 g/1lb lean pork, cubed

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 5 ml/1 tsp salt

  • 1 egg white

  • 3 spring onions (scallions), chopped

  • 1 clove garlic, chopped

  • 1 slice ginger root, chopped

  • 45 ml/3 tbsp chicken stock

  • 15ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 10 ml/2 tbsp black treacle

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1/2 cucumber, cubed

  • 25 g/1/4 cup shelled peanuts

  • 5 ml/1 tsp chili oil


Method:

  1. Mix the pork with half the corn-flour, the salt and egg white and stir well to coat the pork.

  2. Mix the remaining corn-flour with the spring onions, garlic, ginger, stock, wine or sherry, soy sauce and treacle.

  3. Heat the oil and stir-fry the pork until lightly browned then remove it from the pan. Add the cucumber to the pan and stir-fry for a few minutes.

  4. Return the pork to the pan and stir lightly. Stir in the seasoning mixture, bring to the boil and simmer, stirring, until the sauce clears and thickens.

  5. Stir in the peanuts and chili oil and heat through before serving.
