Chinese Pork and Ham Recipes - Pork in Red Sauce  Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 225 g/8 oz pork kidneys, cut into strips

  • 450 g/1lb pork, cut into strips

  • 1 onion, sliced

  • 4 spring onions (scallions), cut into strips

  • 2 carrots, cut into strips

  • 1 stick celery, cut into strips

  • 1 red pepper, cut into strips

  • 45 ml/3 tbsp soy sauce

  • 45 ml/3 tbsp dry white wine

  • 300 ml/1 1/4 cups chicken stock

  • 30 ml/2 tbsp plum sauce

  • 30 ml/2 tbsp wine vinegar

  • 5 ml/1 tsp five-spice powder

  • 5 ml/1 tsp brown sugar

  • 15ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp water


Method:

  1. Heat the oil and fry the kidneys for 2 minutes then remove them from the pan. Reheat the oil and fry the pork until lightly browned.

  2. Add the vegetables and stir-fry for 3 minutes. Add the soy sauce, wine, stock, plum sauce, wine vinegar, five-spice powder and sugar, bring to the boil, cover and simmer for 30 minutes until cooked. Add the kidneys.

  3. Mix together the corn-flour and water and stir into the pan. Bring to the boil then simmer, stirring, until the sauce thickens.
