Chinese Pork and Ham Recipes - Pork in Red Sauce Recipe
Ingredients
30 ml/2 tbsp groundnut (peanut)
oil
225 g/8 oz pork kidneys, cut
into strips
450 g/1lb pork, cut into
strips
1 onion, sliced
4 spring onions
(scallions), cut into strips
2 carrots, cut into strips
1 stick celery, cut into strips
1 red pepper, cut into strips
45 ml/3 tbsp soy sauce
45 ml/3 tbsp dry white wine
300 ml/1 1/4 cups chicken
stock
30 ml/2 tbsp plum sauce
30 ml/2 tbsp wine vinegar
5 ml/1 tsp five-spice powder
5 ml/1 tsp brown sugar
15ml/1 tbsp corn-flour
(cornstarch)
15 ml/1 tbsp water
Method:
Heat the oil and fry the kidneys for 2 minutes then
remove them from the pan. Reheat the oil and fry the
pork until lightly browned.
Add the vegetables and
stir-fry for 3 minutes. Add the soy sauce, wine,
stock, plum sauce, wine vinegar, five-spice powder
and sugar, bring to the boil, cover and simmer for
30 minutes until cooked. Add the kidneys.
Mix
together the corn-flour and water and stir into the
pan. Bring to the boil then simmer, stirring, until
the sauce thickens.
