Chinese Pork and Ham Recipes - Pork with Rice Noodles  Recipe

Ingredients

  • 4 Chinese dried mushrooms

  • 100 g/4 oz rice noodles

  • 225 g/8 oz lean pork, cut into strips

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 1 slice ginger root, minced

  • 2 stalks celery, chopped

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • 2 spring onions (scallions), sliced


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard and stalks and slice the caps.

  2. Soak the noodles in warm water for 30 minutes then drain and cut into 5 cm/2 in pieces. Place the pork in a bowl.

  3. Mix together the corn-flour, soy sauce and wine or sherry, pour over the pork and toss to coat. Heat the oil and fry the salt and ginger for a few seconds.

  4. Add the pork and stir-fry until lightly browned. Add the mushrooms and celery and stir-fry for 1 minute. Add the stock, bring to the boil, cover and simmer for 2 minutes.

  5. Add and noodles and heat through for 2 minutes. Stir in the spring onions and serve at once.
