Chinese Pork and Ham Recipes - Red Cooked Ham with Chestnuts Recipe

Ingredients

  • 1.25 kg/3 lb ham

  • 2 spring onions (scallions), halved

  • 2 cloves garlic, crushed

  • 45 ml/3 tbsp brown sugar

  • 30 ml/2 tbsp rice wine or dry sherry

  • 60 ml/4 tbsp soy sauce

  • 450 ml/2 cups water

  • 350 g/12 oz chestnuts


Method:

  1. Place the ham in a pan with the spring onions, garlic, sugar, wine or sherry, soy sauce and water.

  2. Bring to the boil, cover and simmer for about 1 1/2 hours, turning the ham occasionally.

  3. Blanch the chestnuts in boiling water for 5 minutes then drain.

  4. Add to the ham, cover and simmer for a further 1 hour, turning the ham once or twice.
