Chinese Pork and Ham Recipes - Red-Cooked Pork with Mushrooms Recipe

Ingredients

  • 450 g/1lb lean pork, cubed

  • 250 ml/8 fl oz/1 cup water

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp sugar

  • 5 ml/1 tsp salt

  • 225 g/8 oz button mushrooms


Method:

  1. Place the pork and water in a pan and bring the water to the boil. Cover and simmer for 30 minutes then drain, reserving the stock.

  2. Return the pork to the pan and add the soy sauce. Simmer over a low heat, stirring, until the soy sauce is absorbed. Stir in the wine or sherry, sugar and salt.

  3. Pour in the reserved stock, bring to the boil, cover and simmer for about 30 minutes, turning the meat occasionally. Add the mushrooms and simmer for a further 20 minutes.
