Chinese Pork and Ham Recipes - Red-Cooked Pork  Recipe

Ingredients

  • 675 g/1 1/2 lb lean pork, cubed

  • 250 ml/8 fl oz/1 cup water

  • 1 slice ginger root, crushed

  • 60 ml/4 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 10 ml/2 tsp brown sugar


Method:

  1. Place the pork and water in a pan and bring the water to the boil. Add the ginger, soy sauce, sherry and salt, cover and simmer for 45 minutes.

  2. Add the sugar, turn the meat over, cover and simmer for a further 45 minutes until the pork is tender.
