Chinese Pork and Ham Recipes - Slippery Pork Slices Recipe
Ingredients
225 g/8 oz lean pork, sliced
2 egg whites
15 ml/1 tbsp corn-flour
(cornstarch)
45 ml/3 tbsp groundnut (peanut) oil
50
g/2 oz bamboo shoots, sliced
6 spring onions (scallions),
chopped
2.5 ml/1/2 tsp salt
15 ml/1 tbsp rice wine or dry
sherry
150 ml/2/3 cup chicken stock
Method:
Toss the pork with the egg whites and corn-flour
until well coated. Heat the oil and stir-fry the
pork until lightly browned then remove it from the
pan.
Add the bamboo shoots and spring onions and
stir-fry for 2 minutes. Return the pork to the pan
with the salt, wine or sherry and chicken stock.
Bring to the boil and simmer, stirring for 4 minutes
until the pork is cooked.
