Chinese Pork and Ham Recipes - Slippery Pork Slices Recipe

Ingredients

  • 225 g/8 oz lean pork, sliced

  • 2 egg whites

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 50 g/2 oz bamboo shoots, sliced

  • 6 spring onions (scallions), chopped

  • 2.5 ml/1/2 tsp salt

  • 15 ml/1 tbsp rice wine or dry sherry

  • 150 ml/2/3 cup chicken stock


Method:

  1. Toss the pork with the egg whites and corn-flour until well coated. Heat the oil and stir-fry the pork until lightly browned then remove it from the pan.

  2. Add the bamboo shoots and spring onions and stir-fry for 2 minutes. Return the pork to the pan with the salt, wine or sherry and chicken stock.

  3. Bring to the boil and simmer, stirring for 4 minutes until the pork is cooked.
