Chinese Pork and Ham Recipes - Spare Ribs with  Mushrooms Recipe

Ingredients

  • 6 Chinese dried mushrooms

  • 900 g/2 lb pork spare ribs

  • 1 cloves star anise

  • 45 ml/3 tbsp soy sauce

  • 5 ml/1 tsp salt

  • 15 ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard and stalks and slice the caps.

  2. Chop the spare ribs into 5 cm/2 in pieces. Bring a pan of water to the boil, add the spare ribs and simmer for 15 minutes. Drain well.

  3. Return the ribs to the pan and cover with cold water. Add the mushrooms, star anise, soy sauce and salt.

  4. Bring to the boil, cover and simmer for about 45 minutes until the meat is tender.

  5. Mix the corn-flour with a little cold water, stir it into the pan and simmer, stirring, until the sauce clears and thickens.
