Chinese Pork and Ham Recipes - Spare Ribs with Tomato Recipe

Ingredients

  • 900 g/2 lb pork spare ribs

  • 75 ml/5 tbsp soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 2 eggs, beaten

  • 45 ml/3 tbsp corn-flour (cornstarch)

  • oil for deep-frying

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 onion, thinly sliced

  • 250 ml/8 fl oz/1 cup chicken stock

  • 60 ml/4 tbsp tomato ketchup (catsup)

  • 10 ml/2 tsp brown sugar


Method:

  1. Cut the spare ribs into 2.5 cm/1/2 in pieces. Mix with 60 ml/4 tbsp of soy sauce and the wine or sherry and leave to marinate for 1 hour, stirring occasionally.

  2. Drain, discarding marinade. Coat the spare ribs in egg then in corn-flour. Heat the oil and deep-fry the ribs, a few at a time, until golden.

  3. Drain well. Heat the groundnut (peanut) oil and fry the onion until translucent.

  4. Add the stock, remaining soy sauce, ketchup and brown sugar and simmer for 1 minute, stirring. Add the ribs and simmer for 10 minutes.
