Chinese Rice Recipes - Almond Fried Rice Recipe

Ingredients

  • 250ml/1 cup peanut oil

  • 50g/1/2 cup flaked almonds

  • 4 eggs, beaten

  • 450g/3 cups cooked long-grain rice

  • 5ml/1 tsp salt

  • 3 slices cooked ham, cut into strips

  • 2 shallots, finely chopped

  • 15ml/1 tbsp soy sauce


Method:

  1. Heat the oil and fry the almonds until golden brown. Remove from the pan and drain on kitchen paper.

  2. Pour most of the oil out of the pan then reheat and pour in the eggs, stirring continuously.

  3. Add the rice and salt and cook for 5 minutes, lifting and stirring quickly so that the rice grains are coated with the egg.

  4. Stir in the ham, shallots and soy sauce and cook for a further 2 minutes.

  5. Fold in most of the almonds and serve garnished with the remaining almonds.
