Chinese Rice Recipes - Beef Fried Rice Recipe

Ingredients

  • 225g/8oz cooked long-grain rice

  • 15ml/1 tbsp corn-flour

  • 15ml/1 tbsp soy sauce

  • 15ml/1 tbsp rice wine or dry sherry

  • 5ml/1 tsp sugar

  • 75ml/5 tbsp peanut oil

  • 1 onion, chopped

  • 450g/3 cups cooked long-grain rice

  • 45ml/3 tbsp chicken stock


Method:

  1. Mix the beef with the corn-flour, soy sauce, wine or sherry and sugar.

  2. Heat half the oil and fry the onion until translucent. Add the beef and stir-fry for 2 minutes. Remove from the pan.

  3. Heat the remaining oil, add the rice and stir-fry for 2 minutes. Add the stock and heat through.

  4. Add half the beef and onion mixture and stir until hot then transfer to a warmed serving plate and top with the remaining beef and onions.
