Chinese Rice Recipes - Chicken Fried Rice Recipe

Ingredients

  • 225g/8oz cooked long-grain rice

  • 750ml/3 cups water

  • 30ml/2 tbsp peanut oil

  • 2 cloves garlic, crushed

  • pinch of salt

  • 1 onion, finely chopped

  • 3 spring onion, chopped

  • 100g/4oz cooked chicken, shredded

  • 15ml/1 tbsp soy sauce


Method:

  1. Place the rice and water in a saucepan, bring to the boil, cover and simmer for about 20 minutes until the rice is cooked. Drain well.

  2. Heat the oil and fry the garlic and salt until the garlic turns light golden. Add the onion and stir-fry for 2 minutes.

  3. Add the spring onions and chicken and stir-fry for 2 minutes. Stir in the soy sauce until the rice is covered.
