Chinese Rice Recipes - Chicken and Mushroom Rice Recipe

Ingredients

  • 225g/1 cup long-grain rice

  • 100g/4oz chicken meat, shredded

  • 100g/4oz mushrooms, diced

  • 5ml/1 tsp corn-flour

  • 5ml/1 tsp soy sauce

  • 5ml/1 tsp rice wine or dry sherry

  • pinch of salt

  • 15ml/1 tbsp chopped spring onions

  • 15ml/1 tbsp oyster sauce


Method:

  1. Place the rice in a large pan and bring to the boil. Cover and simmer for about 10 minutes until most of the liquid has been absorbed.

  2. Mix together all the remaining ingredients except the spring onions and oyster sauce, arrange on to of the rice, cover and cook for further 20 minuets over a low heat until cooked.

  3. Stir the ingredients together and sprinkle with spring onions and oyster sauce before serving.
