Chinese Rice Recipes - Coconut Rice Recipe

Ingredients

  • 225g/1 cup Thai scented rice

  • 1 l/4 1/4 cups coconut milk

  • 150ml/2/3 cup coconut cream

  • 1 sprig coriander, chopped

  • pinch of salt


Method:

  1. Bring all the ingredients to the boil in a pan, cover and leave the rice to swell over a low heat for about 25 minutes, stirring occasionally.
