Chinese Rice Recipes - Duck Fried Rice Recipe

Ingredients

  • 4 Chinese dried mushrooms

  • 45ml/3 tbsp peanut oil

  • 2 spring onions, sliced

  • 225g/8oz Chinese cabbage, shredded

  • 100g/4oz cooked duck, shredded

  • 45ml/3 tbsp soy sauce

  • 5ml/1 tbsp rice wine or dry sherry

  • 350g/12oz cooked long-grain rice

  • 45ml/3 tbsp chicken stock


Method:

  1. Soak the mushrooms in warm water for 30 minuets then drain. Discard the stalks and chop the caps.

  2. Heat half the oil ad fry the spring onions until translucent. Add the Chinese cabbage and stir-fry for 1 minute.

  3. Add the duck, soy sauce and wine or sherry and stir-fry for 3 minutes. Remove from the pan.

  4. Heat the remaining oil and stir-fry the rice until coated with oil. Add the stock, bring to the boil and stir-fry for 2 minutes.

  5. Return the duck mixture to the pan and stir until heated through before serving.
