Chinese Rice Recipes - Fried Tuna Rice Recipe

Ingredients

  • 30ml/2 tbsp peanut oil

  • 2 onions sliced

  • 1 green pepper, chopped

  • 450g/3 cups cooked long-grain rice

  • salt

  • 3 eggs, beaten

  • 300g/12oz canned tuna, flaked

  • 30ml/2 tbsp soy sauce

  • 2 shallots, finely chopped


Method:

  1. Heat the oil and fry the onions until soft. Add the pepper and stir-fry for 1 minute. Push to one side of the pan. 

  2. Add the rice, sprinkle with salt and stir-fry for 2 minutes, gradually mixing in the pepper and onions.

  3. Make a well in the centre of the rice, pour in a little more oil and pour in the eggs. Stir until almost scrambled and mix in with the rice.

  4. Cook for a further 3 minuets. Add the tuna and soy sauce and heat through thoroughly. Serve sprinkled with the chopped shallots.
