Abalone with Asparagus Recipe
Ingredients
10 dried Chinese mushrooms
30 ml/2 tbsp groundnut
(peanut) oil
15 ml/1 tbsp water
225 g/8 oz asparagus
2.5 ml/1/2 tsp fish sauce
15 ml/1 tbsp corn-flour
(cornstarch)
225 g/8 oz canned abalone,
sliced
60 ml/4 tbsp stock
1/2 small carrot, sliced
5 ml/1 tsp soy sauce
5 ml/1 tsp oyster sauce
5 ml/1 tsp rice wine or dry
sherry
Method:
Soak the
mushrooms in warm water for 30 minutes then drain.
Discard the stalks.
Heat 15ml/1 tbsp
of oil with the water and fry the mushroom caps for
10 minutes.
Meanwhile, cook
the asparagus in boiling water with the fish sauce
and 5 ml/1 tsp corn-flour until tender. Drain well
and arrange on a warmed serving plate with the
mushrooms. Keep them warm.
Heat the
remaining oil and fry the abalone for a few seconds
the add the stock, carrot soy sauce, oyster sauce,
wine or sherry and remaining corn-flour.
Cook for about 5
minutes until well done then spoon over the
asparagus and serve.
