Chinese Seafood Recipes - Abalone with Mushrooms Recipe

Ingredients

  • 6 dried Chinese mushrooms

  • 400 g/14 oz canned abalone

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 15 ml/1 tbsp rice wine or dry sherry

  • 3 spring onions (scallions), thickly sliced


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps. Drain and slice the abalone, reserving the juice.

  2. Heat the oil and stir-fry the salt and mushrooms for 2 minutes. Add the abalone liquid and sherry, bring to the boil, cover and simmer for 3 minutes.

  3. Add the abalone and spring onions and simmer until heated through. Serve at once.
