Chinese Seafood Recipes - Chili Prawns Recipe

Ingredients

  • 450 g/1lb peeled prawns

  • 1 egg white

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 5 ml/1 tsp salt

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 25 g/1 oz dried red chili peppers, trimmed

  • 1 clove garlic, crushed

  • 5ml/1 tsp freshly ground pepper

  • 15 ml/1 tbsp soy sauce

  • 5ml/1 tsp rice wine-or dry sherry

  • 2.5 ml/1/2 tsp sugar

  • 2.5 ml/1/2 tsp wine vinegar

  • 2.5 ml/1/2 tsp sesame oil


Method:

  1. Place the prawns in a bowl with the egg white, corn-flour and salt and leave to marinate for 30 minutes.

  2. Heat the oil and fry the chili peppers, garlic and pepper for 1 minute.

  3. Add the prawns and remaining ingredients and stir-fry for a few minutes until the prawns are heated through and the ingredients well mixed.
