Recipe
Ingredients
-
30 ml/2 tbsp groundnut
(peanut) oil
-
1 onion, chopped
-
200 g/7 oz canned tuna,
drained and flaked
-
2 stalks celery, chopped
-
100 g/4 oz mushrooms,
chopped
-
1 green pepper, chopped
-
250 ml/8 fl oz/1 cup stock
-
30 ml/2 tbsp soy sauce
-
100 g/4 oz fine egg noodles
-
salt
-
15 ml/1 tbsp corn-flour
(cornstarch)
-
45 ml/3 tbsp water
Method:
-
Heat the oil and fry the onion
until softened. Add the tuna and stir until well
coated with oil.

Add the celery,
mushrooms and
pepper and stir-fry for 2 minutes. Add the stock and
soy sauce, bring to the boil, cover and simmer for
15 minutes.

Meanwhile, cook
the noodles in boiling salt water for about 5
minutes until just tender then drain well and
arrange on a warmed serving plate.

Mix the
corn-flour and water, stir the mixture into the tuna
sauce and simmer, stirring, until the sauce clears
and thickens.
