Clams with Bean Sprouts Recipe
Ingredients
24 clams
15 ml/1 tbsp groundnut
(peanut) oil
150 g/5 oz bean sprouts
1 green pepper, cut into
strips
2 spring onions
(scallions), chopped
15 ml/1 tbsp rice wine or
dry sherry
salt and freshly ground pepper
2.5 ml/1/2 tsp sesame oil
50 g/2 oz smoked ham, chopped
Method:
Scrub the clams thoroughly then soak them in salted
water for a few hours. Rinse under running water.
Bring a pan of water to the boil, add the clams and
simmer for a few minutes until they open. Drain and
discard any that remain closed. Remove the clams
from the shells.
Heat the oil and fry the bean sprouts for 1 minute.
Add the pepper and spring onions and stir-fry for 2
minutes. Add the wine or sherry and season with salt
and pepper.
Heat through then stir in the clams and
stir until well mixed and heated through.
Transfer
to a warmed serving plate and serve sprinkled with
sesame oil and ham.
