Chinese Seafood Recipes - Clams with Bean Sprouts Recipe

Ingredients

  • 24 clams

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 150 g/5 oz bean sprouts

  • 1 green pepper, cut into strips

  • 2 spring onions (scallions), chopped

  • 15 ml/1 tbsp rice wine or dry sherry

  • salt and freshly ground pepper

  • 2.5 ml/1/2 tsp sesame oil

  • 50 g/2 oz smoked ham, chopped


Method:

  1. Scrub the clams thoroughly then soak them in salted water for a few hours. Rinse under running water.

  2. Bring a pan of water to the boil, add the clams and simmer for a few minutes until they open. Drain and discard any that remain closed. Remove the clams from the shells.

  3. Heat the oil and fry the bean sprouts for 1 minute. Add the pepper and spring onions and stir-fry for 2 minutes. Add the wine or sherry and season with salt and pepper.

  4. Heat through then stir in the clams and stir until well mixed and heated through.

  5. Transfer to a warmed serving plate and serve sprinkled with sesame oil and ham.
