Clams with Ginger and Garlic Recipe
Ingredients

24 clams
-
15 ml/1 tbsp groundnut
(peanut) oil

2 slices ginger root,
minced
-
2 cloves garlic, crushed
-
15 ml/1 tbsp water
-
5 ml/1 tsp sesame oil
-
salt and freshly ground
pepper
Method:
-
Scrub the clams thoroughly then soak them in salted
water for a few hours. Rinse under running water.

Heat the oil and
fry the ginger and garlic for 30 seconds. Add the
clams, water and sesame oil, cover and cook for
about 5 minutes until the clams open.

Discard any that
remain closed. Season lightly with salt and pepper
and serve at once.
