Chinese Seafood Recipes - Clams with Ginger and Garlic Recipe

Ingredients

  • 24 clams

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 2 slices ginger root, minced

  • 2 cloves garlic, crushed

  • 15 ml/1 tbsp water

  • 5 ml/1 tsp sesame oil

  • salt and freshly ground pepper


Method:

  1. Scrub the clams thoroughly then soak them in salted water for a few hours. Rinse under running water.

  2. Heat the oil and fry the ginger and garlic for 30 seconds. Add the clams, water and sesame oil, cover and cook for about 5 minutes until the clams open.

  3. Discard any that remain closed. Season lightly with salt and pepper and serve at once.
