Chinese Seafood Recipes - Cod with Mandarin Sauce Recipe

Ingredients

  • 675g/1 1/2lb cod fillets, cut into strips

  • 30ml/2 tbsp corn-flour

  • 60ml/4 tbsp groundnut (peanut oil)

  • 1 spring onion, chopped

  • 2 clove garlic, crushed

  • 1 slice ginger root minced

  • 100g/4oz mushrooms, sliced

  • 50g/2oz bamboo shoots, cut into strips

  • 120ml/1/2 cup soy sauce

  • 30ml/2 tbsp rice wine or dry sherry

  • 15ml/1 tbsp brown sugar

  • 5ml/1 tsp salt

  • 250ml/1 cup chicken stock


Method:

  1. Dip the fish in the corn-flour until lightly coated. Heat the oil and fry the fish until golden brown on both sides. Remove it from the pan.

  2. Add the spring onion, garlic and ginger and stir-fry until lightly browned. Add the mushrooms and bamboo shoots and stir-fry for 2 minutes.

  3. Add the remaining ingredients and bring to the boil, stirring. Return the fish to the pan, cover and simmer for 20 minutes.
