Crab Foo Yung with Bean Sprouts Recipe
Ingredients

6 eggs, beaten
-
45 ml/3 tbsp corn-flour
(cornstarch)
-
225 g/8 oz crab meat
-
100 g/4 oz bean sprouts
-
2 spring onions
(scallions), finely chopped
-
2.5 ml/1/2 tsp salt
-
45 ml/3 tbsp groundnut
(peanut) oil
Method:
-
Beat the eggs then beat in the corn-flour. Mix in
the remaining ingredients except the oil.

Heat the
oil and pour the mixture into the pan o little at a
time to make small pancakes about 7.5cm/3 in
across.
-
Fry until browned on the bottom then turn
and brown the other side.
