Chinese Seafood Recipes - Crab with Ginger Recipe

Ingredients

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 2 slices ginger root, chopped

  • 4 spring onions (scallions), chopped

  • 3 cloves garlic, crushed

  • 1 red chili pepper, chopped

  • 350 g/12 oz crab meat, flaked

  • 2.5 ml/1/2 tsp fish paste

  • 2.5 ml/1/2 tsp sesame oil

  • 15 ml/1 tbsp rice wine or dry sherry

  •  5 ml/1 tsp corn-flour (cornstarch)

  • 15 ml/1 tbsp water


Method:

  1. Heat the oil and fry the ginger, spring onions, garlic and chili for 2 minutes.

  2. Add the crab meat and stir until well coated with the spices. Stir in the fish paste.

  3. Mix the remaining ingredients to a paste then stir them into the pan and stir-fry for 1 minutes. Serve at once.
