Crab Meat with Chinese Leaves Recipe
Ingredients

450 g/1b Chinese leaves,
shredded
-
45 ml/3 tbsp vegetable oil
.

2 spring onions
(scallions), chopped

225 g/8 oz crab meat
-
15 ml/1 tbsp soy sauce
-
15 ml/1 tbsp rice wine or
dry sherry
-
5 ml/1 tsp salt
Method:

Blanch the Chinese leaves in boiling water for 2
minutes then drain thoroughly and rinse in cold
water.

Heat the oil and fry the spring onions until
lightly browned. Add the crab meat and stir-fry for
2 minutes.

Add the Chinese leaves and stir-fry for 4
minutes. Add the soy sauce, wine or sherry and salt
and mix well.

Add the stock and corn-flour, bring to
the boil and simmer, stirring, for 2 minutes until
the sauce clears and thickens.
