Chinese Seafood Recipes - Crab Meat with Chinese Leaves Recipe

Ingredients

  • 450 g/1b Chinese leaves, shredded

  • 45 ml/3 tbsp vegetable oil .

  • 2 spring onions (scallions), chopped

  • 225 g/8 oz crab meat

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt


Method:

  1. Blanch the Chinese leaves in boiling water for 2 minutes then drain thoroughly and rinse in cold water.

  2. Heat the oil and fry the spring onions until lightly browned. Add the crab meat and stir-fry for 2 minutes.

  3. Add the Chinese leaves and stir-fry for 4 minutes. Add the soy sauce, wine or sherry and salt and mix well.

  4. Add the stock and corn-flour, bring to the boil and simmer, stirring, for 2 minutes until the sauce clears and thickens.
