Chinese Seafood Recipes - Crispy-Fried Fish Recipe

Ingredients

  • 450 g/1lb fish fillets, cut into strips

  • 30 ml/2 tbsp rice wine or dry sherry

  • salt and freshly ground pepper

  • 45 ml/3 tbsp corn-flour (cornstarch)

  • 1 egg white, lightly beaten

  • oil for deep-frying


Method:

  1. Toss the fish in the wine or sherry and season with salt and pepper. Dust lightly with corn-flour.

  2. Beat the remaining corn-flour into the egg white until stiff then dip the fish in the batter.

  3. Heat the oil and deep-fry the fish strips for a few minutes until golden brown.
