Ingredients

450 g/1lb fish fillets,
cut into strips
-
30 ml/2 tbsp rice wine or dry
sherry
-
salt and freshly ground pepper
-
45 ml/3 tbsp corn-flour
(cornstarch)

1 egg white, lightly beaten
-
oil for deep-frying
Method:
-
Toss the fish in
the wine or sherry and season with salt and pepper.
Dust lightly with corn-flour.

Beat the remaining corn-flour into the egg white until stiff then dip
the fish in the batter.
-
Heat the oil and deep-fry
the fish strips for a few minutes until golden
brown.
