Chinese Seafood Recipes - Deep-Fried Cod Recipe

Ingredients

  • 900 g/2 lb cod fillets, cubed

  • salt and freshly ground pepper

  • 2 eggs, beaten

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • oil for deep-frying

  • 1 lemon, cut into wedge


Method:

  1. Season the cod with salt and pepper. Beat the eggs and flour to a batter and season with salt. Dip the fish in the batter.

  2. Heat the oil and deep-fry the fish for a few minutes until golden brown and cooked through.

  3. Drain on kitchen paper and serve with lemon wedges.
