Chinese Seafood Recipes - Deep-Fried Lobster Recipe

Ingredients

  • 450 g/1lb lobster meat

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • 1 egg, beaten

  • 30 ml/3 tbsp plain (all-purpose) flour

  • oil for deep-frying


Method:

  1. Cut the lobster meat into 2.5 cm/1 in cubes and toss with the soy sauce and sugar. Leave to stand for 15 minutes then drain.

  2. Beat the egg and flour then add the lobster and toss well to coat.

  3. Heat the oil and deep-fry the lobster until golden brown. Drain on kitchen paper before serving.
