Chinese Seafood Recipes - Deep-Fried Marinated Fish Recipe

Ingredients

  • 450 g/1 lb sprats or other small fish, cleaned

  • 3 slices ginger root, minced

  • 120 ml/4 fl oz/1/2 cup soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 1 clove star anise

  • oil for deep-frying

  • 15 ml/1 tbsp sesame oil


Method:

  1. Place the fish in a bowl. Mix together the ginger, soy sauce, wine or sherry and anise, pour over the fish and leave to stand for 1 hour, turning occasionally.

  2. Drain the fish, discarding the marinade. Heat the oil and fry the fish in batches until crispy and golden brown.

  3. Drain on kitchen paper and serve sprinkled with sesame oil.
