Marinated Fish Recipe
Ingredients
450 g/1 lb sprats or other
small fish, cleaned
3 slices ginger root,
minced
120 ml/4 fl oz/1/2 cup soy
sauce
15 ml/1 tbsp rice wine or
dry sherry
1 clove star anise
oil for deep-frying
15 ml/1 tbsp sesame oil
Method:
Place the fish in
a bowl. Mix together the ginger, soy sauce, wine or
sherry and anise, pour over the fish and leave to
stand for 1 hour, turning occasionally.
Drain the
fish, discarding the marinade. Heat the oil and fry
the fish in batches until crispy and golden brown.
Drain on kitchen paper and serve sprinkled with
sesame oil.
