Ingredients

24 oysters, shelled

salt and freshly ground
pepper

1 egg, beaten

50 g/2 oz/1/2 cup plain
(all-purpose) flour

250 ml/8 fl oz/1 cup water

oil for deep-frying
-
4 spring onions
(scallions), chopped
Method:
-
Sprinkle the oysters with salt and pepper. Beat the
egg with the flour and water to a batter and use to
coat the oysters.

Heat the oil and deep-fry the
oysters until golden brown. Drain on kitchen paper
and serve garnished with spring onions.
