Chinese Seafood Recipes - Deep-Fried Oysters Recipe

Ingredients

  • 24 oysters, shelled

  • salt and freshly ground pepper

  • 1 egg, beaten

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 250 ml/8 fl oz/1 cup water

  • oil for deep-frying

  • 4 spring onions (scallions), chopped


Method:

  1. Sprinkle the oysters with salt and pepper. Beat the egg with the flour and water to a batter and use to coat the oysters.

  2. Heat the oil and deep-fry the oysters until golden brown. Drain on kitchen paper and serve garnished with spring onions.
