Chinese Seafood Recipes - Deep-Fried Sesame Prawns Recipe

Ingredients

  • 450 g/1lb peeled prawns

  • 1/2 egg white

  • 5 ml/1 tsp soy sauce

  • 5 ml/1 tsp sesame oil

  • 50 g/2 oz/1/2 cup corn-flour (cornstarch)

  • salt and freshly ground white pepper 

  • oil for deep-frying

  • 60 ml/4 tbsp sesame seeds

  • lettuce leaves


Method:

  1. Mix the prawns with the egg white, soy sauce, sesame oil, corn-flour, salt and pepper. Add a little water if the mixture is too thick.

  2. Heat the oil and deep-fry the prawns for a few minutes until lightly golden.

  3. Meanwhile, toast the sesame seeds briefly in a dry pan until golden. Drain the prawns and mix with the sesame seeds. Serve on a bed of lettuce.
