Ingredients

50 g/2 oz plain
(all-purpose) flour
-
25 g/1 oz/1/4 cup corn-flour
(cornstarch)

2.5 ml/1/2 tsp baking powder
-
2.5 ml/1/2 tsp salt
-
1 egg
-
75 ml/5 tbsp water
-
15 ml/1 tbsp groundnut
(peanut) oil
-
450 g/1 lb squid, cut into
rings
-
oil for
deep-frying
Method:
-
Beat the flour, corn-flour, baking powder, salt, egg,
water and oil together to make a batter.
-
Dip the
squid in the batter until well coated. Heat the oil
and deep-fry the squid a few pieces at a time until
golden brown.

Drain on kitchen paper before serving.
