Chinese Seafood Recipes - Far Eastern Style Prawns Recipe

Ingredients

  • 16 -20 peeled king prawns

  • juice of 1 lemon

  • 120 ml/4 fl oz/1/2 cup dry white wine

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp honey

  • 15 ml/1 tbsp grated lemon rind salt and pepper

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 1 clove garlic, chopped

  • 6 spring onions cut into strips

  • 2 carrots, cut into strips

  • 5 ml/1 tsp five-spice powder

  • 5 ml/1 tsp corn-flour (cornstarch)


Method:

  1. Mix the prawns with the lemon juice, wine, soy sauce, honey and lemon rind and season with salt and pepper. Cover and marinate for 1 hour.

  2. Heat the oil and fry the garlic until lightly browned. Add the vegetables and stir-fry until tender but still crisp.

  3. Drain the prawns, add them to the pan and stir-fry for 2 minutes.

  4. Strain the marinade and mix it with the five-spice powder and corn-flour. Add to the wok, stir well and bring to the boil.
