Chinese Seafood Recipes - Fish with Bean Sprouts Recipe

Ingredients

  • 450 g/1lb bean sprouts

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 3 slices ginger root, minced

  • 450 g/1lb fish fillets, sliced

  • 4 spring onions (scallions), sliced

  • 15 ml/1 tbsp soy sauce

  • 60 ml/4 tbsp fish stock

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 15 ml/1 tbsp water


Method:

  1. Blanch the bean sprouts in boiling water for 4 minutes then drain well. Heat half the oil and fry the salt and ginger for 1 minute.

  2. Add the fish and fry until lightly browned then remove it from the pan. Heat the remaining oil and fry the spring onions for 1 minute.

  3. Add the soy sauce and stock and bring to the boil. Return the fish to the pan, cover and simmer for 2 minutes until the fish is cooked.

  4. Mix the corn-flour and water to a paste, stir into the pan and simmer, stirring, until the sauce clears and thickens.
