Chinese Seafood Recipes - Fish Fillets in Brown Sauce Recipe

Ingredients

  • 450 g/1 lb cod fillets, thickly sliced

  • 30 ml/2 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp soy sauce

  • 3 spring onions (scallions), finely chopped

  • 1 slice ginger root, finely chopped

  • 5 ml/1 tsp salt

  • 5 ml/1 tsp sesame oil

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 3 eggs, beaten

  • 90 ml/6 tbsp groundnut (peanut) oil

  • 90 ml/6 tbsp fish stock


Method:

  1. Place the fish fillets in a bowl. Mix together the wine or sherry, soy sauce, spring onions, ginger, salt and sesame oil, pour over the fish, cover and leave to marinate for 30 minutes.

  2. Remove the fish from the marinade and toss in the corn-flour then dip in the beaten egg.

  3. Heat the oil and fry the fish until golden brown on the outside. Pour off the oil and stir in the stock and any remaining marinade.

  4. Bring to the boil and simmer gently for about 5 minutes until the fish is cooked.
