Ingredients

4 white fish fillets
-
75 g/3 oz small gherkins
-
2 spring onions (scallions)
-
2 slices ginger root
-
30 ml/2 tbsp water
-
5 ml/1 tsp groundnut
(peanut) oil
-
2.5 ml/1/2 tsp salt
-
2.5 ml/1/2 tsp rice wine or
dry sherry
Method:
-
Place the fish on
a heatproof plate and sprinkle with the remaining
ingredients.

Place on a rack in a steamer, cover and
steam for about 15 minutes over boiling water until
the fish is tender.
-
Transfer to a
warmed serving plate, discard the ginger and spring
onions and serve.
