Chinese Seafood Recipes - Fish with Gherkins Recipe

Ingredients

  • 4 white fish fillets

  • 75 g/3 oz small gherkins

  • 2 spring onions (scallions)

  • 2 slices ginger root

  • 30 ml/2 tbsp water

  • 5 ml/1 tsp groundnut (peanut) oil

  • 2.5 ml/1/2 tsp salt

  • 2.5 ml/1/2 tsp rice wine or dry sherry


Method:

  1. Place the fish on a heatproof plate and sprinkle with the remaining ingredients.

  2. Place on a rack in a steamer, cover and steam for about 15 minutes over boiling water until the fish is tender.

  3. Transfer to a warmed serving plate, discard the ginger and spring onions and serve.
