Chinese Seafood Recipes - Fish in Rice Wine Recipe

Ingredients

  • 400 ml/14 fl oz/1 3/4 cups rice wine or dry sherry

  • 120 ml/4 fl oz/1/2 cup water

  • 30 ml/2 tbsp soy sauce

  • 5 ml/1 tsp sugar

  • salt and freshly ground pepper

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 15 ml/1 tbsp water

  • 450 g/1lb cod fillets

  • 5 ml/1 tsp sesame oil

  • 2 spring onions (scallions), chopped


Method:

  1. Bring the wine, water, soy sauce, sugar, salt and pepper to the boil and boil until reduced by half.

  2. Mix the corn-flour to a paste with the water, stir it into the pan and simmer, stirring, for 2 minutes. Season the fish with salt and sprinkle with sesame oil.

  3. Add to the pan and simmer very gently for about 8 minutes until cooked. Serve sprinkled with spring onions.
