Fried Prawns in Sauce Recipe
Ingredients

75 g/3 oz/1/3 cup corn-flour
(cornstarch)

1/2 egg, beaten
-
5 ml/1 tsp rice wine or dry
sherry salt
-
450 g/1lb peeled prawns
-
45 ml/3 tbsp groundnut
(peanut) oil
-
5 ml/1 tsp sesame oil
-
1 clove garlic, crushed
-
1 slice ginger root, minced
-
3 spring onions
(scallions), sliced
-
15 ml/1 tbsp fish stock
-
5 ml/1 tsp wine vinegar

5 ml/1 tsp sugar
Method:
-
Mix together the
corn-flour, egg, wine or sherry and a pinch of salt
to make a batter. Dip the prawns in the batter so
that they are lightly coated.

Heat the oil and fry
the prawns until they are crisp outside. Remove them
from the pan and drain off the oil.

Heat the sesame
oil in the pan, add the prawns, garlic, ginger and
spring onions and stir-fry for 3 minutes.

Stir in
the stock, wine vinegar and sugar, stir well and
heat through before serving.
