Chinese Seafood Recipes - Haddock with Garlic Recipe

Ingredients

  • 450 g/1lb haddock fillets

  • 5 ml/1 tsp salt

  • 30 ml/2 tbsp corn-flour (cornstarch)

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 6 cloves garlic

  • 2 slices ginger root, crushed

  • 45 ml/3 tbsp water

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp yellow bean sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp brown sugar


Method:

  1. Sprinkle the haddock with salt and dust with corn-flour.

  2. Heat the oil and fry the fish until golden brown on both sides then remove it from the pan.

  3. Add the garlic and ginger and fry for 1 minute. Add the remaining ingredients, bring to the boil, cover and simmer for 5 minutes.

  4. Return the fish to the pan, cover and simmer until tender.
