Garlic Recipe
Ingredients

450 g/1lb haddock fillets
-
5 ml/1 tsp salt
-
30 ml/2 tbsp corn-flour
(cornstarch)
-
60 ml/4 tbsp groundnut (peanut) oil
-
6 cloves garlic
-
2 slices ginger root,
crushed
-
45 ml/3 tbsp water
-
30 ml/2 tbsp soy sauce
-
15 ml/1 tbsp yellow bean
sauce
-
15 ml/1 tbsp rice wine or dry sherry
-
15
ml/1 tbsp brown sugar
Method:
-
Sprinkle the
haddock with salt and dust with corn-flour.

Heat the
oil and fry the fish until golden brown on both
sides then remove it from the pan.
-
Add the garlic
and ginger and fry for 1 minute. Add the remaining
ingredients, bring to the boil, cover and simmer for
5 minutes.

Return the fish to the pan, cover and
simmer until tender.
