Plaits Recipe
Ingredients

450g/1lb haddock fillets,
skinned
-
salt
-
5ml/1 tsp five-spice powder
-
juice of 2 lemons
-
5ml/1 tsp aniseed, ground
-
5ml/1 tsp freshly ground
pepper
-
30ml/2 tbsp soy sauce
-
30ml/2 tbsp oyster sauce
-
15ml/1 tbsp honey
-
60ml/4 tbsp chopped chives
-
8-10 spinach laves
-
45ml/3 tbsp wine vinegar
Method:

Cut the fish into
long thin strips and shape into plaits. sprinkle
with salt, five-spice powder and lemon juice and
transfer to a bowl.

Mix together the aniseed,
pepper, soy sauce, oyster sauce, honey and chives,
pour over the fish and leave to marinate for at
least 30 minutes.

Line the steam basket with the
spinach leaves, place the plaits on top, cover and
steam over gently boiling water with the vinegar for
about 25 minutes.
