Chinese Seafood Recipes - Halibut with Tomato Sauce Recipe

Ingredients

  • 450 g/1lb halibut fillets

  • salt

  • 15 ml/1 tbsp black bean sauce

  • 1 clove garlic, crushed

  • 2 spring onions (scallions), chopped

  • 2 slices ginger root, minced

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp soy sauce

  • 200 g/7 oz canned tomatoes, drained

  • 30 ml/2 tbsp groundnut (peanut) oil


Method:

  1. Sprinkle the halibut generously with salt and leave to stand for 1 hour. Rinse off the salt and pat dry.

  2. Place the fish in an oven-proof bowl and sprinkle with the black bean sauce, garlic, spring onions, ginger, wine or sherry, soy sauce and tomatoes.

  3. Place the bowl on a rack in a steamer, cover and steam for 20 minutes over boiling water until the fish is cooked.

  4. Heat the oil until almost smoking and sprinkle over the fish before serving.
