Halibut with
Tomato Sauce Recipe
Ingredients

450 g/1lb halibut fillets
-
salt
-
15 ml/1 tbsp black bean
sauce
-
1 clove garlic, crushed
-
2 spring onions
(scallions), chopped
-
2 slices ginger root,
minced
-
15 ml/1 tbsp rice wine or
dry sherry
-
15 ml/1 tbsp soy sauce
-
200 g/7 oz canned tomatoes,
drained
-
30 ml/2 tbsp groundnut (peanut) oil
Method:
-
Sprinkle the
halibut generously with salt and leave to stand for
1 hour. Rinse off the salt and pat dry.

Place the
fish in an oven-proof bowl and sprinkle with the
black bean sauce, garlic, spring onions, ginger,
wine or sherry, soy sauce and tomatoes.

Place the
bowl on a rack in a steamer, cover and steam for 20
minutes over boiling water until the fish is cooked.

Heat the oil until almost smoking and sprinkle over
the fish before serving.
