Lobster Cantonese Recipe
Ingredients

2 lobsters
-
30 ml/2 tbsp oil
-
15 ml/1 tbsp black bean
sauce
-
1 clove garlic, crushed
-
1 onion, chopped
-
225 g/8 oz minced (ground)
pork
-
45 ml/3 tbsp soy sauce
-
5 ml/1 tsp sugar
-
salt and freshly ground
pepper
-
15 ml/1 tbsp corn-flour
(cornstarch)
-
75 ml/5 tbsp water
-
1 egg, beaten
Method:
-
Break open the lobsters, take out the meat and cut
it into 2.5cm/1 in cubes.

Heat the oil and fry the
black bean sauce, garlic and onion until lightly
browned. Add the pork and fry until browned.

Add the
soy sauce, sugar, salt, pepper and lobster ,cover
and simmer for about 10 minutes.

Blend the corn-flour
and water to a paste, stir it into the pan and
simmer, stirring, until the sauce clears and
thickens. Turn off the heat and stir in the egg
before serving.
