Lobster Nests Recipe
Ingredients

30 ml/2 tbsp groundnut
(peanut) oil

5 ml/1 tsp salt

1 onion, thinly sliced
-
100 g/4 oz mushrooms,
sliced
-
100 g/4 oz bamboo shoots,
sliced
-
225 g/8 oz cooked lobster
meat
-
15ml/1 tbsp rice wine or
dry sherry
-
120 ml/4 fl oz/1/2 cup
chicken stock
-
pinch of freshly ground pepper
-
10 ml/2 tsp corn-flour
(cornstarch)
-
15ml/1 tbsp water
-
4 noodle baskets
Method:
-
Heat the oil and fry the salt and onion until
softened. Add the mushrooms and bamboo shoots and
stir-fry for 2 minutes.

Add the lobster meat, wine
or sherry and stock, bring to the boil, cover and
simmer for 2 minutes. Season with pepper.

Mix the corn-flour and water to a paste, stir into the pan
and simmer, stirring, until the sauce thickens.
-
Arrange the noodle nests on a warmed serving plate
and top with the lobster stir-fry.
