Chinese Seafood Recipes - Lobster Nests Recipe

Ingredients

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 5 ml/1 tsp salt

  • 1 onion, thinly sliced

  • 100 g/4 oz mushrooms, sliced

  • 100 g/4 oz bamboo shoots, sliced

  • 225 g/8 oz cooked lobster meat

  • 15ml/1 tbsp rice wine or dry sherry

  • 120 ml/4 fl oz/1/2 cup chicken stock

  • pinch of freshly ground pepper

  • 10 ml/2 tsp corn-flour (cornstarch)

  • 15ml/1 tbsp water

  • 4 noodle baskets


Method:

  1. Heat the oil and fry the salt and onion until softened. Add the mushrooms and bamboo shoots and stir-fry for 2 minutes.

  2. Add the lobster meat, wine or sherry and stock, bring to the boil, cover and simmer for 2 minutes. Season with pepper.

  3. Mix the corn-flour and water to a paste, stir into the pan and simmer, stirring, until the sauce thickens.

  4. Arrange the noodle nests on a warmed serving plate and top with the lobster stir-fry.
