Steaks Recipe
Ingredients

4 whiting or haddock steaks
-
2 cloves garlic, crushed
-
2 slices ginger root,
crushed
-
3 spring onions
(scallions), chopped
-
15 ml/1 tbsp rice wine or
dry sherry
-
15 ml/1 tbsp wine vinegar
-
salt and freshly ground
pepper
-
45 ml/3 tbsp groundnut
(peanut) oil
Method:

Place the fish in
a bowl. Mix the garlic, ginger, spring onions, wine
or sherry, wine vinegar, salt and pepper, pour over
the fish, cover and leave to marinate for several
hours.

Remove the fish from the marinade. Heat the
oil and fry the fish until browned on both sides
then remove from the pan.

Add the marinade to the
pan, bring to the boil then return the fish to the
pan and simmer gently until cooked through.
