Chinese Seafood Recipes - Mussels in Black Bean Sauce Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 2 slices ginger root, minced

  • 30 ml/2 tbsp black bean sauce

  • 15ml/1 tbsp soy sauce

  • 1.5 kg/3 lb mussels, scrubbed and bearded

  • 2 spring onions (scallions), chopped


Method:

  1. Heat the oil and fry the garlic and ginger for 30 seconds. Add the black bean sauce and soy sauce and fry for 10 seconds.

  2. Add the mussels, cover and cook for about 6 minutes until the mussels have opened. Discard any that remain closed.

  3. Transfer to a warmed serving dish and serve sprinkled with spring onions.
