Mussels in Black Bean Sauce Recipe
Ingredients

45 ml/3 tbsp groundnut
(peanut) oil
-
2 cloves garlic, crushed

2 slices ginger root,
minced
-
30 ml/2 tbsp black bean
sauce
-
15ml/1 tbsp soy sauce
-
1.5 kg/3 lb mussels,
scrubbed and bearded
-
2 spring onions
(scallions), chopped
Method:
-
Heat the oil and fry the garlic and ginger for 30
seconds. Add the black bean sauce and soy sauce and
fry for 10 seconds.
-
Add the mussels, cover and cook
for about 6 minutes until the mussels have opened.
Discard any that remain closed.
-
Transfer to a warmed
serving dish and serve sprinkled with spring onions.
